A fried mid-eastern meal with a RiCo corn rice flair!? Say no more.

 
Ingredients:

  • 1 cup Corn Rice cooked
  • ½ cup Chickpeas
  • 1 egg
  • ¼ cup breadcrumbs
  • 1 tbsp cilantro
  • 1 tbsp onion
  • 1tbsp garlic
  • ¼ cup carrots, grated
  • 1 tbsp. butter

 
Procedure

  1. In a pan, melt the butter, saute the onion, garlic, carrots and chickpeas.
  2. Season with salt and pepper.
  3. Puree the mixture. Fold in the cooked corn rice, cilantro and egg.
  4. Dredge in breadcrumbs and then fry
