- 1 cup Corn Rice cooked
- ½ cup Chickpeas
- 1 egg
- ¼ cup breadcrumbs
- 1 tbsp cilantro
- 1 tbsp onion
- 1tbsp garlic
- ¼ cup carrots, grated
- 1 tbsp. butter
- In a pan, melt the butter, saute the onion, garlic, carrots and chickpeas.
- Season with salt and pepper.
- Puree the mixture. Fold in the cooked corn rice, cilantro and egg.
- Dredge in breadcrumbs and then fry
